Text file encoding question

When I select save as in MS office, and I want to save in text format (yes, i know i loose all those formatting), it prompts me with an option to save in "Windows (Default)", "MS-DOS", and "Other encoding" with a list to choose from. My question in saving text documents is what is the difference between saving in windows encoded and in MS-DOS encoded format?
 
This is just a guess, but I think that windows text format might be able to use a larger character set. The MS-DOS text set has 256 possible characters. Windows text set probably has more characters than that (like stuff in the Character Map prog thingy).
