Where in Explorer do I go to customize the start menu, like deleting and moving folders and shortcuts? I can't find it like in XP.

Here's a quick method.
RIght click on the start button and go "Open". Viola!
You may also want to check out "Open All Users"
This will also tell you where the start menu is located in your user profile. It's buried.
