You should only increase each by about 10% at a time and test using something like nVidia's camellan (sp) demo, when you start to see artifacts (blocky bits) or worst get a lock up or some other malfunction then back your setting off by 10% and you have overclocked...
Keep in mind your card will get hotter and could thus effect the rest of your system - personally I don't think it's worth the hassel but everybody needs to try.
