I recently just got a Shuttle XPC SB83G5, it uses the shuttle FB83 Mainboard, but I can not seem to find any of the software that supports it. Is there any software that will just tell me CPU temp and things like that in general without having to control fans and all this other nonsense?

try MBM5 - although they recently stopped adding mobos I betcha that one is already in there - worth a try anyway
MBM Mother Board Monitor - you can have it monitor in the taskbar.
Sisoft Sandra will also monitor the MB and CPU temp as well as performing burn in.
Both freeware.
Warning on my el-cheapo ECS the MB temp does not read in any monitor program. Not sure if shutttle will behave better. CPU is fine.
