Is there a way to make certain icons not have text beneath them? I'm thinking mainly my desktop icons, since I know what they are and I don't really need the words underneath. :)

You have to keep track of how many you have done doing it this way.

Highlight the icon then hit F2. Now>>>

1/ Alt(hold) + 255(let go) (Numeric Keys) ( 1 time)

2/ Alt + 255 - Alt + 255 ( 2 times)

3/ Alt + 255 - Alt + 255 - Alt + 255 ( 3 times)

4/ Alt + 255 - Alt + 255 - Alt + 255 - Alt + 255 ( 4 times)

For each one you have to do it one extra time.
