The Pen tool is the one to use for crisp cut outs of an object. Not sure what they used however.

We all go about it in different ways. I just remove the background as much as possible with the the "cut" feature and the eraser. Then I use the "defringe" feature. After that, I take a very small "smudge" tool and smooth up the edges manually. Normally I spend a little more time making it just right so these aren't perfect. I spent about 10 to 15 minutes cutting them out. It took about 5 minutes per pic after that.
