Anyone want to share their BBQ secrets?

Syd has a great marinade. I'll have him post it when he gets back.
 
Beef Rub

1/4 cup salt, or to taste
2 1/2 tablespoons dark brown sugar
2 tablespoons paprika
2 teaspoons dry mustard
2 teaspoons garlic powder
2 teaspoons onion powder
1 1/2 teaspoons dried basil
1 teaspoon ground bay leaves
3/4 teaspoon ground coriander
3/4 teaspoon ground savory
3/4 teaspoon dried thyme
3/4 teaspoon ground black pepper
3/4 teaspoon ground white pepper
1/8 teaspoon ground cumin

Combine all ingredients in a mixing bowl, then put the mixture in a shaker bottle. It will keep in an airtight container for 3 months.

Pork Rub

1/4 cup salt
2 tablespoons sugar
1/4 cup paprika
2 tablespoons garlic powder
2 tablespoons onion powder
3 tablespoons cayenne
2 tablespoons ground
black pepper

Combine all the ingredients in a bowl and mix well, then pour into a shaker jar. This rub will keep for a couple of months in an airtight bottle.
 
I tried putting a BBQ under an awning once - whole place filled up with smoke.. :(

Works better under trees.
