Default Misplacing Drives

I have a reocurring problem with Server 2003 SP2 in that it forgets to assign letters to the partitions on my PC and my external drive. Normally the drives are intact and I can assign letters through Computer Management but I know that there must be some problem along the way if Server misses these partitions. This problem began only on the external drive and from booting up today sees Explorer only showing the drive Server is on so its now affecting tem all. This problem never occured while operating under XP or Vista just Server 2003. The Layout of the drives partitions is given below:

C: Windows Server 2003 SP2
F: Families Documents
G: My Documents
H: Windows Server 2003 SP2
I: Windows Vista Ultimate
J: Maxtor Removable Hard Disk
