    Here in Canada they're more well known as French Fries or Fries, some restaurants also call them chips when grouped with fish, aka 'Fish n Chips' but they're mainly called Fries here.

    'Chips' usually means what this first post was 'meant' to be about hehe.

    'Crisps' here, usually are baked and have less fat etc...

    I feel the best are the ones I make in either the oven, fryer or microwave.
    To me nothing beats these nice warm chips. :)

    Some history on chips or crisps and instructions for making your own can be found at the link below but for frying I use a fryer and not a skillet.
