well I'm biased seeing as how I'm 3/4 Cajun, any kind of Jambalaya, however, my favorite Jambalaya, is sausage and shrimp Jambalaya. with red beans, cole slaw, corn on the cob on the side. I can eat that till I throw up.

Jambalaya is a Cajun dish, it's a really thick soup dish with rice and all sorts of good stuff in it.
Here is a fairly decent recipe for Jambalaya, it can be found below, other Cajun recipes can be found there as well, really really good eating. I make Jambalaya at least once a week. Jambalaya Recipe
